The Sommelier’s main objectives are to ensure a consistent and quality service is delivered to all guests. The Sommelier is to assist the manager with achieving high scores on guest satisfaction surveys by recognising regular guests and to do what it takes to ensure all guest needs are met – within reason.

  • Examples of organisational and English communication skills must be displayed. Experience in a five-star or similar environment is required (hotel or independent). This must include experience in a similar position of bar management or as sommelier.

  • Excellent management, organisational and communication skills

  • Excellent knowledge of food products, dishes and the preparation methods, profound knowledge of customer service and of all beverage products such as spirits, wines, beers, cocktail and cocktail preparation methods is essential.

  • Demonstrate an understanding of business acumen, support and assist the restaurant manager with cost controlling, forecasting and knowledge of industry trends.

  • Micros or other similar POS system knowledge is taken into consideration.
